If you are looking for a wonderful dessert, look no further. The Cooking Dad bought a fresh pineapple at Costco and he had this great idea to grill it. He grills everything he can. So while I was at work he looked for a recipe for his grilled pineapple. He found at RecipeZaar which is his favorite go to place for recipes. Just click on the RecipeZaar link in the previous sentence to go straight to the recipe. It was so good!

It was so simple and easy to make, he was really excited about that. He wants to make different things but just is not kitchen saavy… yet. It smelled so good while it was grilling.

The one thing he did differently is he used Captain Morgan’s Coconut Rum instead of regular rum and it was fantastic with the little bit of coconut flavor with the pineapple and brown sugar.

First, you have to cut the pineapple into slices and add the rum and brown sugar. Let it sit in the fridge anywhere from 2 hours to 2 days.

Northwest Cherry Bomb MargaritaIngredients
1 to 1-1/2 cups pitted sweet Northwest Cherries
2 cups Jose Cuervo Golden Margarita
1 cup cracked ice
Juice of 1/2 lime
Mint leaves, for garnish
4 fresh Northwest Cherries with stems, for garnish

Preparation
Place all ingredients, except mint and 4 fresh cherries, in blender and process until smooth. Pour into 4 glasses over ice. Garnish with mint leaves and cherries.

Serves
Makes 4 servings

Ingredients
2 ounces Copa De Oro Coffee Liqueur
2 ounces brewed espresso, hot
6 ounces whole milk, frothed or steamed
Ground chocolate

Preparation
Combine espresso and coffee liqueur in large coffee mug.
Gently spoon frothed milk on top. Dust lightly with ground chocolate.

Mocha CoffeeIngredients
4 cups strong brewed coffee
1 (14-ounce) can Eagle Brand Sweetened Condensed Milk (NOT evaporated milk)
2 (1-ounce) squares unsweetened chocolate
1/2 teaspoon ground cinnamon
Whipped cream or vanilla ice cream (optional)

Preparation
In large saucepan, combine coffee, sweetened condensed milk, chocolate and cinnamon. Heat through, stirring constantly. Serve in mugs. Top with whipped cream or small spoonful of ice cream (optional).

Mint-Tea LemonadeIngredients
2 cups boiling water
6 Lipton Bedtime Story Caffeine-Free Herbal Pyramid Tea Bags
1/4 cup sugar
2 cups prepared lemonade
1 small lemon, sliced

Preparation
Pour boiling water over tea bags; cover and brew 5 minutes. Remove tea bags and squeeze. Stir in sugar until dissolved; cool.
In pitcher, combine all ingredients. Serve over ice.

Mexican Hot Chocolate Shots With Spicy FoamIngredients
2 cans (12 fluid ounces each) Carnation Evaporated Milk, divided
1 cup water
1 1/2 cups (9 ounces) Nestl? Toll House Semi-Sweet or Milk Chocolate Morsels
1 1/4 teaspoons vanilla extract, divided
1/2 plus 1/8 teaspoon ground cinnamon, divided
1/8 teaspoon ground cayenne pepper, divided (optional)

Preparation
POUR 1/2 cup evaporated milk into medium mixer bowl; place beaters into mixture. Freeze about 30 minutes or until ice crystals form around edge of bowl.
HEAT remaining evaporated milk, water, morsels, 1 teaspoon vanilla extract, 1/2 teaspoon cinnamon and 1 pinch cayenne pepper in medium saucepan over low heat, stirring frequently, until melted. Do not boil. Set aside.
REMOVE chilled evaporated milk from freezer. Beat on high speed 1 minute or until very frothy. Add 1/4 teaspoon vanilla extract, 1/8 teaspoon cinnamon and 1 pinch cayenne pepper. Continue beating 3 to 4 minutes or until mixture forms soft peaks.

Ingredients
1/2 cup ground Starbucks Anniversary Blend coffee
20 ounces cold, filtered water
1/2 cup milk
1/2 cup maple syrup
1/2 teaspoon vanilla syrup
1/2 teaspoon butter
1/2 teaspoon almond extract
Fresh whipped cream
Pinch of maple sugar powder

Preparation
Brew coffee according to appropriate proportions and brewing instructions.
While brewing, combine cold milk, maple syrup, vanilla syrup, butter and almond extract in medium saucepan. Heat and stir.
Fill four 10-ounce mugs half-full of coffee and top with syrup mixture. Stir until mixed.
Top with fresh whipped cream and pinch of maple sugar powder.

Mango Tango SmoothieIngredients
2 (6-ounce) containers Horizon Organic apricot mango blended low-fat yogurt
4 apricots, pitted and peeled
1 cup mango nectar
8 ice cubes
1 teaspoon ground ginger
1 teaspoon pure vanilla or almond extract

1 can of frozen Bacardi Mixers Margarita
1/2 mango, diced
1/2 cup of Bacardi Superior Rum
5 cups of ice
Mango or lime for garnish

Preparation
Blend together frozen Bacardi Mixer Margarita, mango and Bacardi Superior Rum.
Add ice and blend for 45 to 60 seconds, or until uniform.
