Honey Ginger Rainbow Vegetables

This is a light and pretty vegetable that pairs well with anything. I like to serve it over white rice.
Ingredients
- one each (small): red, yellow, orange, and green pepper sliced medium-thin
- one small red onion sliced thin
- 2 tbs garlic
- 3 tbs olive oil
- 1 tbs dried ginger, or 2 tbs minced fresh
- 2 tbs dried cilantro, or 4 tbs chopped fresh
- 1/4 c honey
- 2 tbs soy sauce
- 2 tbs rice wine vinegar
- 1/4 c white wine
- 1/4 c sesame seeds
- Salt and pepper to taste
Directions
- Saute garlic and onions in oil until onions are tender. Salt and pepper to taste.
- Add peppers and saute until peppers are tender (add more oil if necessary to coat and cook the peppers).
- Stir in 1/2 of the wine, honey and ginger. Continue to cook to reduce wine.
- Mix remaining ingredients (except the sesame seeds) in a bowl and stir into vetetable mixture. Reduce heat and cook until sauce is reduced to desired consistency, being careful not to overcook the vegetables.
