Ingredients
- 2 cleaned whole trout, skin on
- 1/4 cup chili powder
- 1/4 cup lime juice
- 1/4 cup olive oil
- 2 tbs cumin powder
- 1 cup chopped fresh herbs (lemon balm, chives, cilantro, etc.)
- 2 tbs chopped garlic
- Salt and Pepper to taste
Directions
- Combine dry ingredients (except salt and pepper).
- Combine olive oil and lime juice in a separate bowl.
- Generously coat first side of trout with olive oil, salt and pepper.
- Rub oiled side of trout with dry rub, coat generously.
- Repeat on other side of trout.
- Mix fresh herbs and garlic with remaining dry rub, adding remaining olive oil and lime juice to moisten mixture.
- Stuff trout with herb mixture.
- Grill on medium-high approximately 4-5 minutes per side or until fish flakes.
Serve with rainbow vegetables and white rice, or any other vegetable. Some prefer to remove the skin prior to serving. The skin is very oily, and has a strong flavor. Taste it yourself and decide. I leave the skin on. It is a healthy source of Omega-3.
