I have received a few requests on how to cook paddlefish. This is one uggly fish, and not easy to cook. Sounds like when the boys catch ‘em, they’re not quite sure what to do with ‘em… sound familiar?? LOL

Mark raves about this grilled paddlefish recipe. He’s going to try it on the next fishing trip. Apparently, they’ve deep-fried the life out of the fish traditionally. Here’s a new idea…

The trick to paddlefish is to cook the heck out of it. Make sure it is done. This is not a fish to sear… it is meaty, and will be rubbery if not cooked through. I will continue to work on ideas, but this one seems to work. Two successful feeds and recipe requests so far. So, here it is. Simple and seems to please.

Ingredients

  • 1 lb paddlefish cut into 4-6 oz servings
  • 1/4 c olive oil
  • 1/2 tsp liquid smoke
  • 1/4 c medium ground pepper (I found a vegetable-flavored pepper that is really good)
  • Course seas salt to taste
  • 1/4 c dried cilantro

Apricot poached Tilapia with sauteed sweet corn and asparagusLight and easy. This is a sweet way to fix Tilapia. Tilapia is a great fish for poaching. It cooks in minutes, and quickly absorbs the flavor of the liquid.

Ingredients

  • 2 tbs olive oil
  • 1 tbs minced garlic
  • 1 tbs slivered almonds
  • 2 tbs apricot preserves
  • ¼ c orange juice
  • ¼ c white wine
  • 1 tbs white wine vinegar
  • 1 tbs dried cilantro
  • Salt and pepper to taste
  • Optional for a little heat: ¼ tsp crushed red pepper (or to taste)

Directions

  1. Sauté garlic in oil for a minute, stirring
  2. add almond slivers and continue to sauté for another minute
  3. whisk remaining ingredients in a mixing bowl.
  4. Pour liquid into sauté pan and bring to a low simmer.
  5. Add Tilapia and cook until fish is opaque and flakes (total cook time less than five minutes), turning once to cook evenly.

Serve immediately, garnished with more dried herbs and almonds. The left-over liquid can be thickened with cornstarch and drizzled over fish. This is a light entre that pairs well with rice or any grain. For…

This is a delightful twist to a classic vegetable. Quick to prepare if you have already removed the corn from the ear, blanched and frozen it. Pairs well with Easy Apricot and Almond Poached Tilapia.

Ingredients

  • 2 c sweet corn, removed from ear.
  • 3 tbs prepared pesto (or to taste)
  • Salt and pepper to taste

Directions

  1. Mix ingredients in a sauce pan
  2. Sauté until corn is tender
  3. Serve immediately

Summer grilling option: clean ears of corn, coat them with pesto, wrap in foil and grill.

The unofficial start to summer was upon us this Memorial Day weekend. It was sunny and gorgeous the whole time; here in western WA, we have not seen a more gorgeous weekend in years. It usually rains. So we thought we would grill us up some dinner last night. Cooking Dad made us some wonderful BBQ country ribs, baked beans; but what stood out the most was the corn he made. He decided he wanted something different than a regular corn on the cob, he wanted something more exciting. So he thought he would grill the corn. But he also wanted something else other than butter on that corn. We have a huge jar of mayonnaise and he thought he would try his hand at concocting a spread or sauce for that corn. He came up with the Pepper Mayonnaise that was wonderful on the corn. He did a good job at his first try to make up his own recipe.
