Chocolate Chip CoffeecakeIngredients
Crisco® No-Stick Cooking Spray
2-1/2 cups Hungry Jack® Buttermilk Pancake and Waffle Mix (Just Add Water)
1/3 cup sugar
1/2 cup miniature semi-sweet chocolate chips
1/2 cup water
1/2 cup sour cream
1/2 teaspoon vanilla extract
Topping
1/4 cup sugar
1/4 cup finely chopped walnuts
1/2 teaspoon cinnamon

Preparation
Heat oven to 375°F. For coffee cake, spray an 8- or 9-inch square pan with nonstick spray. Combine pancake mix, sugar and chocolate chips in medium bowl; stir until just mixed. Add water, sour cream and vanilla; blend well. Using an ice cream scoop, shape dough into 16 2-inch dough balls. Place balls in 4 rows of 4 each in prepared pan.
For topping, combine sugar, walnuts and cinnamon in small bowl; mix well. Sprinkle topping over dough.
Bake 24 to 26 minutes or until golden brown. Cool 10 minutes before serving. Serve warm.

Cherry Good OatmealIngredients
2 cups lowfat milk
1/4 teaspoon salt
1 cup old-fashioned rolled oats
2/3 cup mixed dried berries and cherries (red tart cherries, blueberries and strawberries)
1/8 teaspoon ground cinnamon
2 teaspoons packed brown sugar
1/2 cup lowfat milk
4 teaspoons chopped toasted pecans or walnuts (optional)*

Preparation
Bring 2 cups milk and the salt to boil in a medium saucepan. Stir in dried oats; then stir in dried berries, cherries and cinnamon.
Reduce heat. Simmer, uncovered, for 5 minutes, stirring occasionally. Remove from heat.
To serve, spoon oatmeal into bowls. Pour 2 tablespoons milk over each serving. Sprinkle with brown sugar and, if desired, nuts.

Makes 4 (1/2-cup) servings

*To toast nuts: Preheat oven to 350°F. Spread nuts in a single layer in a baking pan. Bake about 8 minutes or until lightly toasted. Cool nuts before chopping.

2 15-ounce cans Louisiana cut yams, drained
1/2 cup orange juice
2 tablespoons brown sugar

Vegetable oil spray
Egg substitute equivalent to 2 eggs, or 2 eggs
1/4 teaspoon pepper, divided
4 6-inch corn tortillas
1 cup frozen fat-free shredded potatoes (about 3 ounces)
1/2 medium red bell pepper, diced
1/4 cup chopped Canadian bacon (about 1 ounce)
1 ounce fat-free or reduced-fat Cheddar cheese, shredded

Preparation
Heat oven to 350°F. Heat small nonstick skillet over medium-low heat. Remove the skillet from heat; lightly spray with vegetable oil spray (being careful not to spray near a gas flame). Return skillet to heat, cook egg substitute and 1/8 teaspoon pepper 3 to 4 minutes until eggs are cooked through, stirring occasionally. Set aside.

1/2 cup chopped fresh mushrooms
1/4 cup chopped green pepper
1/4 cup chopped tomato
2 tablespoons finely chopped onion
1/2 cup cholesterol-free egg substitute
2 teaspoons freshly grated Parmesan cheese
4 slices Pepperidge Farm 9 Grain Natural Whole Grain Bread

Preparation
Prep/Cook Time: 15 minutes
SPRAY nonstick skillet with vegetable cooking spray. Heat skillet over medium heat. Add mushrooms, green pepper, tomato and onion. Cover and cook until softened. Remove from skillet. Wipe out skillet with paper towel.

Breakfast CasseroleIngredients
1 package Regular Flavor Jimmy Dean Pork Sausage
10 eggs, lightly beaten
3 cups milk
2 teaspoons dry mustard
1 teaspoon salt
6 cups cubed bread
1/2 teaspoon black pepper
2 cups shredded sharp Cheddar cheese
1/2 cup sliced mushrooms (optional)
1 medium tomato, seeded and chopped (optional)
1/2 cup thinly sliced green onions (optional)

Preparation
Preheat oven to 325°F.
In large skillet, cook sausage over medium-high heat, stirring frequently until thoroughly cooked and no longer pink.
In large mixing bowl, combine eggs, milk, mustard and salt; stir well. Distribute half of bread evenly in buttered 9 x 13 x 2-inch baking dish. Sprinkle with half of pepper, half of cheese, half of sausage and half of each optional ingredient.
Repeat layering using remaining bread, pepper, cheese, sausage and optional ingredients. Pour egg mixture evenly over casserole.
Bake uncovered 55 to 60 minutes, or until eggs are set. Tent with foil if top begins to brown too quickly.

Breakfast BurritoIngredients
4 Mission Life Balance Whole Wheat 8-inch Tortillas, warmed
12 slices fully cooked bacon, crispy and chopped small
12 eggs, whole
4 tablespoons grated cheddar cheese
Salt and pepper to taste
Vegetable spray

Preparation
In a small bowl; whisk eggs with salt and pepper to evenly combine.
To make 1 burrito: heat non-stick saut? pan over high heat.
Spray pan with vegetable spray; add equivalent of 3 whole eggs to pan. Soft scramble eggs, taking approximately 30 to 45 seconds.
Add 2 tablespoons chopped bacon (equals 3 strips chopped) and 1 tablespoon grated cheddar cheese to the eggs and stir to combine, melting the cheese.
Spoon hot egg mixture into center of a warmed tortilla; roll burrito style and serve.
Repeat steps 2 to 5 for remaining 3 tortillas.

Blueberry Coffee CakeIngredients
Coffee Cake
1 package Duncan Hines Bakery-Style Wild Maine Blueberry Muffin Mix
2 large egg whites
1/2 cup orange juice
1/2 cup strawberry preserves
Crisco Cooking Spray
Crumb Topping
1/2 cup chopped pecans
1/2 cup firmly packed brown sugar
2 tablespoons Crisco Butter Flavored Shortening Sticks
1 tablespoon all-purpose flour

Preparation
Preheat oven to 350°:F. Spray 8-inch square pan with nonstick cooking spray.
Rinse blueberries from mix with cold water and drain.
For coffee cake, place muffin mix in medium bowl. Break up any lumps. Add egg whites and orange juice. Stir until moistened, about 50 strokes. Fold in blueberries. Spread in pan. Top with strawberry preserves.
For crumb topping, combine pecans, brown sugar,
shortening and flour. Stir until mixture is crumbly.
Sprinkle evenly on batter.
Bake for 35 to 40 minutes or until toothpick inserted
into center comes out clean. Serve warm or cool completely.
