Mango-Fennel Salsa

Mango-Fennel Salsa

 

Ingredients

  • 1 Mango diced
  • 1/2 red onion diced
  • 1/3 c fresh fennel diced
  • 1 small can mild green chiles
  • 1/3 c sweet corn (canned, or cut from ear)
  • 1 tsp cumin
  • 1/3 c coursely chopped fresh herbs (cilantro, lemon balm, chives…)
  • 2 tbs whint wine vinegar
  • 2 tbs olive oil
  • Salt and pepper to taste
  • red pepper flakes to taste

Directions

  1. Combine ingredients
  2. Chill and serve

French Toast with Creamy Maple SyrupIngredients
Creamy Maple Syrup
3/4 cup granulated sugar
1/2 cup Nestl? Carnation Evaporated Milk
1/3 cup maple-flavored pancake syrup
1 teaspoon vanilla extract
2 tablespoons butter
French Toast
6 large eggs
1 cup Nestl? Carnation Evaporated Milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
3 tablespoons butter, divided
12 slices whole-wheat or white bread, divided

Preparation
For Creamy Maple Syrup: COMBINE sugar, 1/2 cup evaporated milk, syrup and 1 teaspoon vanilla extract in small saucepan. Cook over medium heat, stirring constantly, until sugar is dissolved. Remove from heat; stir in 2 tablespoons butter. Makes 1 1/2 cups.
For French Toast: WHISK together eggs, remaining 1 cup evaporated milk, vanilla extract and cinnamon in medium bowl.
MELT 1 tablespoon butter in large, nonstick skillet over medium heat. Dip 4 slices bread in milk mixture and then place in skillet. Cook about 2 minutes per side or until golden. Repeat 2 more times with 2 tablespoons butter and…

Four-Grain Yogurt PancakesIngredients
1 cup unbleached flour
1/2 cup whole-wheat flour
2 tablespoons each: cornmeal, soy flour, wheat germ and oat bran
2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 teaspoons sugar
2 large Horizon Organic eggs
2 tablespoons Horizon Organic unsalted butter, melted
2 cups Horizon Organic fat-free plain yogurt
3/4 cup Horizon Organic fat-free milk

Preparation
In large mixing bowl, combine flours and grains, baking powder, baking soda and sugar.
Beat in eggs, melted butter, yogurt and fat-free milk. Batter will be lumpy.
Lightly oil hot griddle. Bake pancakes on griddle at medium temperature. Serve immediately with butter, fresh fruit and syrup.

Football Sausage PancakesIngredients
1 package (12 ounces) Johnsonville Breakfast Sausage Links
2-1/2 cups Hungry Jack complete pancake mix
1 teaspoon baking cocoa or cinnamon
1-1/2 cups water
1/4 teaspoon vanilla extract
Maple syrup

Preparation
Cook sausage according to package directions; set aside.
In a bowl, combine pancake mix and cocoa/ cinnamon. Stir in water and vanilla. Pour 1/2 cup batter onto a hot greased nonstick skillet or griddle in the shape of a football. Place one sausage link lengthwise down center of batter. Cut two sausage links into thirds; arrange on sides of center link to form football laces.
Using two spatulas, carefully turn pancake when bubbles form on top and edges are dry. Cook until second side is golden brown. (Trim edges to resemble a football if necessary). Invert onto a plate, sausage-side up. Repeat with remaining batter and sausage.

Eggs in a NestIngredients
6 tablespoons butter, melted
2 cloves garlic, minced
3 sheets phyllo dough, thawed
4 eggs
Salt and pepper
2 tablespoons water or sour cream
1 tablespoon butter
1 cup diced Smithfield Spiral Sliced Ham
1 cup grated cheddar cheese

Preparation
Preheat oven to 350°F. Butter 4 muffin cups. In small bowl, combine melted butter and garlic. On cutting board, stack 3 phyllo sheets and cut into fourths, forming 12 squares. Cover phyllo with damp paper towel when not in use because it dries out quickly. Press 1 phyllo square (1 sheet thick) into bottom of each muffin cup. (Don’t worry if phyllo tears.) Brush with butter. Add another layer of phyllo and brush with butter. Repeat a third time. Bake 10 minutes. Carefully remove phyllo baskets from muffin cups and cool on wire rack.
In medium bowl beat eggs; add salt and pepper to taste with water or sour cream. Melt 1 tablespoon butter in medium skillet and add eggs. Sprinkle ham over eggs. Scramble eggs to desired doneness….
