Just a fun post to share with you all what a fun Mother’s Day I had with my husband and kids. They were pretty sweet today, aside from the neverending daily bickering my 2 daughters do. Sometimes it is a complete zoo at my house, but I would never trade them for anything and they are the light of my life.

Today, I was allowed to sleep in; it was nice! Then I had my coffee ready and Cooking Dad didn’t drink all the flavored coffee creamer this time, that was really cool too!

Even though the day was overcast, cloudy, and almost rainy; it still didn’t dampen the fact that we went to the Farmer’s Market and a new produce stand (which I will be frequenting very often since their prices were the best I have seen).

Jay’s Produce Stand (located right by my house) and for fellow Thurston County people (meaning people who live or visit here), this is the best place for great produce with such low prices. I spent a grand total of $8.48 and got this

Asparagus 99 cents/lb (I got about 1 lb)

The recipe could be used everyday but you can use it to surprise your guests. Trim any excess skin off the chicken wings. Cut off and discard the wing tips. Then cut each wing into two pieces at joint. To prepare the dipping sauce, combine all of the ingredients in a small bowl and mix well.

Here is a couple of my favourite Blueberry Muffin Recipes.  They are a great snack with coffee and kids love them in their lunchboxes.  Also, muffins are great to freeze so make them in bulk to have plenty on hand, particularly when blueberries are in season and cheap.  Even if you are not great at baking or new to cooking, these recipes are very easy to make.

Blueberry Muffin Recipe #1

2 cups SR flour, sifted

1/2 cup caster sugar

2 eggs, lightly beaten

1/3 cup vegetable oil

1 cup sour cream

1 cup fresh or frozen blueberries

Preheat oven to 180C.  Combine the flour, sugar, eggs, oil and sour cream in a bowl and mix well.  Sprinkle the mixture with the blueberries and then spoon into muffin tins.  Bake for 25-30 minutes or until cooked through.

Blueberry Muffin Recipe #2

2 cups SR flour

1 egg lightly beaten

1 cup milk

4 tbsp melted butter

A couple of days ago I was playing around on Twitter and came upon a message one of my followers sent me. She asked if I had a recipe for a killer tomato cream sauce. I didn’t have one already, so I decided to make one. The best thing about this dish is that it is really two recipes in one. I started from scratch by making my own roasted tomato sauce, then used that in the second phase to make the finished sauce. I’ll bring you that far and then it’s up to your imagination to finish the dish. My wife and I had it for dinner tonight with pan seared chicken breasts and brown sugar glazed carrots.
Roasted Tomato Sauce
Ingredients:
8 Large Vine Ripened Tomatoes
Salt
White Pepper
1/2 cup Sherry
Directions:
  • Cut the tomatoes in half lengthwise and place them onto a baking sheet, cut side up.
  • Season the cut side of the tomatoes sparingly with salt and white pepper.
  • Place them into the oven preheated to 275 degrees and cook for 2 1/2 to 3 hours.
  • At this point turn the heat up to 400 and cook for 15…
