NO-BAKE BUTTERSCOTCH HAYSTACKS

Servings: 24
Ingredients:

  • 1 c  Butterscotch Chips
  • - (Hershey's)
  • 1/2 c  Reese's Peanut Butter Chips
  • 1 tb Shortening
  • -(do not use butter,
  • - margarine or oil)
  • 1 1/2 c  Chow mein noodles
  • -- coarsely broken

Line tray with wax paper. In medium microwave-safe bowl, place
butterscotch chips, peanut butter chips and shortening. Microwave at
HIGH (100%) 1 minute; stir. If necessary, microwave at HIGH an
additional 15 seconds at a time, stirring after each heating, just until
chips are melted and mixture is smooth when stirred. Immediately add
chow mein noodles; stir to coat. Drop mixture by heaping teaspoonfuls
onto prepared tray or into paper candy cups; let stand until firm. If
necessary, cover and refrigerate until firm. Store in tightly covered
container in refrigerator. About 2 dozen candies.

Chocolate Haystacks: Substitute 1 cup Hershey’s Semi-Sweet Chocolate

Sauteed Mixed Vegetables In Taro Nest

Servings: 1
Ingredients:

  • 40 g  Taro
  • 1 tb Salt
  • 1 tb Cornstarch
  • Cooking oil for deep-frying

95 g Thinly sliced lotus root
-(one section)
40 g Sliced water chestnut
-(approximately 1/3 cup)
40 g Soaked dried black Chinese
-mushrooms (approximately 5
-pieces)
40 g Soaked black fungi
-(approximately 12 pieces)
40 g Snow peas (approximately 15
-pieces)
40 g Celery
1 tb Chinese celery (optional)
40 g Carrot (a few slices)

4 tb Water
1 tb Cornstarch
1/2 ts Salt
1/2 ts Sugar

4 Soaked dried black Chinese
-mushrooms
3 Tomatoes
6 Baby corn (approximately 80
-g)
6 Mustard green stems
-(approximately 115 g)
12 Soaked dried bamboo fungi
-(approximately 150 g)

1 tb Oil
2 ts Salt
1 ts Sugar
4 c Stock (or water)

8 tb Oil

Carrot, Celery, And Apple Juice With Sorrel

Servings: 10
Ingredients:

  • 3 lb Of fresh whole carrots              1    Granny Smith apple
  • 1    Or 2 stalk of celery                3    To 6 sorrel leaves to taste

This juice requires the use of a juice machine such as the Champion, the
Juice Man, Olympic, or the like. The sorrel adds a nice lemony tartness to
the drink that helps the celery balance the sweetness of the carrots. For
the apple, use no other than the Granny Smith, its sour flavor is an
essential ingredient to this juice.

Samosas

Servings: 10
Ingredients:

  • 2 c  Whole wheat flour
  • 3 tb Vegetable oil
  • 1/2 ts Salt
  • Vegetable oil to deep fry
  • 7 md Boiled potatoes
  • 10 tb Vegetable oil
  • 1/8 ts Asafetida
  • 1 ts Whole fennel seeds
  • 1 ts Whole cumin seeds
  • 1 ts Whole black mustard seeds
  • 12 ea Whole fenugreek seeds
  • 3 ea Whole dried red chilies
  • 1/2 ts Turmeric
  • 1 1/2 ts Salt
  • 1 tb Lemon juice

To make the pastry, combine the 2 c of flour with 3 tb oil. Add salt and
mix. Add 1 cup of water a little at a time until you have a firm dough.
Knead the dough well for 10 minutes or until the dough is elasticy and
smooth. Form inot a ball, brush with a little oil, cover with a damp
towel and set aside.

To make the filling:

Boil the potatoes and let them cool. You may peel them if you like,I choose
not to. Dice them into bite-sized pieces.

In a wok or very large skillet, heat oil over medium heat. When very hot,

BROCCOLI AMANDINE

Ingredients:

  • 10 oz (2 pk) Broccoli spears;             2 tb Lemon juice
  • -frozen                           1/2 ts Salt
  • 1/2 c  Butter or margarine               1/2 c  Slivered blanced almonds

1. Cook broccoli as package label directs. 2. Meanwhile, melt butter in
small saucepan. Add rest of ingredients; simmer, stirring occasionally, 5
minutes. 3. Drain broccoli; arrange in serving dish; top with the sauce.

Cocktail Okra

Servings: 5
Ingredients:

  • 2 lb Fresh Tender Okra Pods
  • 5 ea Hot Red/Green Peppers
  • 5 ea Cloves Garlic, Peeled
  • 1 qt Distilled Vinegar
  • 1/2 c  Water
  • 6 T  Pickling Salt
  • 1 T  Celery Seed
  • 1 T  Mustard Seed

Wash Okra and pack into clean jars with screw tops.
Into each jar put 1 red or green hot pepper and 1
clove garlic. Bring remaining ingredients to a boil
and pour over the okra, filling the jars to
overflowing. Seal while hot and let age for 2 months
before using. Makes 5 pints
