Apricot Glazed Mock Duck in the Crock Pot

Apricot Glazed Mock Duck

 You can find vegetarian mock duck canned at your local Asian market. I love cooking in my crock pot, but this could easily be done in a Wok or large saute pan in a much reduced time-frame. If you use a slow-cooker, you’ll need a 6 quart crock pot due to the bulk of the cabbage when you add it. I made this for Christmas dinner as a main course for me and a side dish for Mark, who happily ate steak along-side the mock duck. 

Ingredients  

  • 3 Tbs Olive oil
  • 2 Tbs chopped garlic
  • 1 Tbs soy sauce
  • Chili paste or peppers to taste
  • 1/4 c silvered almonds
  • 1 small onion, sliced thin
  • 2 c fresh green beans
  • 1 Roma tomato, diced
  • 1 c sliced mushrooms
  • 1 can vegetarian mock duck, drained and broken into bite-size pieces
  • 1 celery stock, sliced thin
  • 1 cup shredded carrots
  • 8 c shredded cabbage
  • 2-3 Tbs corn starch or as needed to thicken sauce per directions
  • Sauce
    • 2 tsp soy sauce
    • 1 tsp sesame oil
    • 1/4 c rice wine vinegar
    • 1/4 c white wine
    • 3 Tbs apricot preserves

Chicken Stock For Soup

Servings: 1
Ingredients:

  • 4 lb Chicken backs, necks                2 md Celery stalks, trimmed
  • 4 qt Water                                    -quartered
  • 2    Carrots, quartered                  5    Peppercorns
  • 1 lg Onion, quartered                    1    Clove garlic (optional)

Add chicken to cold water, bring to boil and turn down heat. Add
vegetables, simmer, skimming foam as needed. Simmer partially covered for
2 - 6 hours, add pepper corns and garlic last hour. When stock is done
strain through a double layer of dampened cheesecloth and refrigerate,
covered, over night. Next day carefully skim off fat. Stock will keep for
about 3 days refrigerated or about 3 months frozen.

Nacho Cheese Soup

Servings: 8
Ingredients:

  • 1 pk (5.25 oz.) dry au gratin
  • -potatos
  • 1 cn (15.25 oz.) whole kernel
  • -corn--undrained
  • 1 c  Picante sauce
  • 2 c  Water
  • 2 c  Milk
  • 1 1/2 c  Grated Cheddar cheese
  • 1 cn (2.25 oz.) sliced ripe
  • -olives--drained

Tortilla chips

In a large saucepan combine potatos, corn, picante sauce and water. Bring
to a boil; reduce heat, cover and simmer for 25 minutes or until potatos
are tender, stirring occcasionally. Add dry cheese sauce mix from au
gratin potato package, milk, cheddar cheese and olives. Cook until cheese
is melted and soup is heated through, stirring occasionally.

Serve with chips.

Makes 8 cups.

Tea Concentrate

Servings: 12
Ingredients:

  • 1/4 c  Tea, loose -=OR=-                   5 c  Water
  • 12    Tea bags

Combine tea and water in a 3- to 4- quart pan. Bring to a boil over high
heat and boil, uncovered, until liquid is reduced to 4 cups. (About 6
minutes.) Pour liquid concentrate through a fine strainer into a container
and discard residue. Cover and chill until cold, at least 3 hours. Will
keep for up to 2 weeks. To use, dilute by the pitcher or glass. The optimum
dilution ratio for pouring over ice is about 1 part tea concnetrate to 2
parts water and/or juice.

MOM’S SPAGHETTI SAUCE

Servings: 10
Ingredients:

  • 1 ea 4 Quart Pot
  • 6 ea To 8 Italian Sausages
  • - And/or
  • 1 lb To 2 lb meat, ground beef
  • - or ground turkey
  • 1/4 c  Vegetable oil
  • 2 ea Large onions
  • 5 ea To 6 cloves of garlic
  • 2 cn Tomato paste small (6 oz.)
  • 4 cn Tomato sauce (15 oz.)
  • 2 tb Sweet Basil
  • 2 tb Italian Seasoning
  • 3 tb Parsley
  • 1 ts To 2 ts salt (to taste)
  • 1 tb Ground black pepper

You may make this sauce with meat or with sausage or both if you really
want to. The way you do it depends on what you want to do with it or what
you like.

For SAUSAGE start like this;

In your pot, brown sausages very well and remove from pot. Add 1/4 cup of
oil to pot, then the two large onions diced fine (not minced), and then add
five to six cloves of minced garlic (or to your taste) to oil dripping and
the onion. Very, very slowly brown onions stirring often. Do not let it
burn or the sauce will taste burned.
