So, I made this roast yesterday, and it tasted great, but what I was trying to accomplish didn’t quite turn out.  I guess as long as it was good, right? I was shooting for a low heat, long roast, trying to get to that point where the meat just falls apart.  I didn’t quite get there, but, as I said, it still tasted good.

The honey and balsamic glaze added a sweet tang to the meat, too.  It was really delicious.  I served it up with that bread that I baked the day before.  All in all, it made for a yummy feast.

Slow Dutch Oven Roast

12″ deep dutch oven
8-10 coals below
10-12 coals above

  • 2 Tbsp olive oil
  • 3-4 cloves garlic, minced
  • Kosher salt
  • Coarse ground pepper
  • 3-5 lb beef roast

  • 3-4 large potatoes
  • 3-4 medium onions
  • 1-2 carrots, sliced
  • 2-3 stalks celery, sliced

  • 1/2 lb bacon

  • 1 Tbsp coarse ground pepper
  • 1 Tbsp Kosher salt
  • 1 Tbsp olive oil
  • 3 Tbsp balsamic vinegar
  • 1/2 cup honey, maybe a little more

  • 2-3 Tbsp flour
  • ~1/4 cup of water

Ingredients
1 1/3 cups 1% milk
3 eggs
2/3 cup low-fat sour cream
1/2 cup sugar
1/4 cup lemon juice
1 1/2 teaspoons grated lemon peel
1 1/2 teaspoons vanilla
1 teaspoon ground cinnamon
1/2 teaspoon salt
4 slices white bread, crust removed, torn into small pieces, divided
3/4 cup sweetened dried cranberries
1 pear, peeled, cored, cut into 1/4-inch-thin slices
3/4 cup hazelnuts, toasted, skin removed, chopped
2 tablespoons sugar
1/2 teaspoon ground cinnamon

Preparation
Preheat oven to 350°F. Whisk first 9 ingredients in medium bowl until smooth; set aside.
Place 3/4 of bread pieces in greased 8-inch square pan. Layer cranberries, remaining bread pieces and pears in pan. Pour milk- mixture over pears.
Mix hazelnuts, sugar and cinnamon in small bowl. Sprinkle over mixture in pan.
Bake 45 to 55 minutes until golden and knife inserted into center comes out clean. Let stand 5 minutes before cutting.

Ingredients
4 tablespoons butter
2/3 cup plus 3 tablespoons light brown sugar, divided
2 tablespoons light corn syrup
1/2 cup chopped pecans
2 1/2 cups biscuit baking mix
1 (15-ounce) can sweet potatoes (yams), drained and mashed or 1 cup mashed sweet potatoes
1/3 cup skim milk
1/4 cup dried cranberries

Preparation
Preheat oven to 400°F.
In a 9 x 9 x 2-square non-stick baking pan, melt the butter in the oven. Stir in 2/3 cup brown sugar and corn syrup and spread the mixture evenly in the pan. Sprinkle with pecans.
In a large mixing bowl, beat together the biscuit baking mix, sweet potatoes, and milk until the dough forms a ball. Turn dough onto a surface dusted with baking mix, knead several times and roll or pat into a 12-inch rectangle. Sprinkle with the remaining 3 tablespoons brown sugar and cranberries. Ingredients
2 cans (12 fluid ounces each) Nestl? Carnation Evaporated Milk
8 large eggs, beaten
1 pound precooked sausage links, cut into 1/4-inch slices
2 cups (8-ounce package) shredded cheddar cheese
1 cup chopped red and/or green bell pepper
2 green onions (green parts only), sliced
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
8 cups 1/2-inch cubed Italian or French bread (about 9 slices)

Preparation
PREHEAT oven to 350? F. Grease 13 x 9-inch baking dish.
COMBINE milk, eggs, sausage, cheese, red pepper, green onions, onion powder and garlic powder in large bowl. Add bread cubes, stirring gently to moisten bread. Pour mixture into baking dish.
BAKE for 45 minutes or until set. Serve warm.

Notes, Tips & Suggestions
Tips:
This bake can be assembled ahead of time and refrigerated. Let stand at room temperature for 30 minutes before baking.
Substitute multi-grain bread for Italian or French bread.

Ingredients
2 packages (12 ounces each) Johnsonville Original Breakfast Sausage Links
9 eggs
3 cups milk
1-1/2 teaspoons dry mustard
1 teaspoon salt
1/2 teaspoon pepper
2 packages (20 ounces each) refrigerated hash browns
2 cups (8 ounces) shredded cheddar cheese
1/2 cup diced sweet red pepper
1/3 cup thinly sliced green onions
2 cups salsa or picante sauce, optional

Preparation
Place sausage on 15 x 10 x 1-inch baking pan. Bake at 375°F 15 to 20 minutes or until sausage is no longer pink, turning once; drain and slice into 1/4-inch coins.
In large bowl, combine eggs, milk, mustard, salt and pepper. Add hash browns, sausage, cheese, sweet red pepper and green onions; mix well. Pour into greased 13 x 9 x 2-inch baking dish. Cover and refrigerate overnight.
Remove from refrigerator 30 minutes before baking. Bake, uncovered, at 350°F 65 to 70 minutes or until set and golden brown. Let stand 10 minutes before serving. Serve with salsa or picante sauce if desired.
