“The Cat’s Away…” Part II

Another dish that I love, but is not one of my wife’s favorites is Kofta with Tahini sauce.  There are a lot of strong flavors in it, and they all blend together very nicely.  At it’s most basic, it’s a ground meat and potato dish, but it gets its flavors from the middle eastern spices and the tahini paste with lemon juice sauce.

Before I get into the process, there are a few special ingredients you need to acquire, and you might have to get them from a specialty store, possibly even a middle eastern market.  If you can’t find them, you can do some mixing (in some cases) and some substitutions.

One ingredient you really can’t substitute is the Tahini Paste.  It’s like all-natural peanut butter, but it’s made from ground sesame seeds.  I can usually find it in health-food stores.  It has a strong, nutty and almost bitter edge, but when combined with the lemon juice it’s just plain amazing.

Ingredients
1 package (about 16 ounces) brownie mix (8 x 8-inch size)
Egg, water and oil to prepare mix
48 lollipop sticks
Wilton Orange, Spooky Green and Light Cocoa Candy Melts
Wilton Spider Mix, Hallow Pumpkin Mix, Halloween Nonpareil Sprinkles, and Orange, Black and Lavender Sugars, as desired

Preparation
Preheat oven to 350°F. Spray brownie pop mold with vegetable pan spray; place on cookie sheet.
Prepare brownie mix following package directions. Spoon batter into prepared brownie pop mold, filling cavities 2/3 full. Bake 15 minutes. Remove mold from oven; insert lollipop sticks. Return to oven and continue baking 10 to 15 minutes or until brownies test done. Cool brownies in mold on cooling grid 20 minutes; remove from mold and cool completely.
Melt each color candy following package instructions. Dip cooled pops into melted candy, covering completely. While the candy is still soft, sprinkle with or dip pops into sprinkles and sugars. Place on parchment paper to set.

Ingredients
1 cup granulated sugar
1 cup cold water
1 tablespoon lemon juice
1/2 teaspoon almond extract
1 pound (about 4 cups) individually quick-frozen cherries
1 1/2 quarts vanilla ice cream, softened
2 packages (about 15 ounces each) brownie mix (8 x 8-inch size)
Eggs, water and oil to prepare mix
Vanilla Whipped Icing or whipped topping
Whole Bing cherries, for garnish

Preparation
In medium bowl, combine sugar, water, lemon juice and extract; stir until sugar is dissolved. Place in freezer until slushy, about 1 1/2 hours.
In food processor fitted with grater attachment, grate frozen cherries. Immediately whisk into slushy sugar syrup. Cover with plastic wrap or place in airtight container. Freeze 2 to 3 hours or until mixture is a soft serve consistency. Fold in ice cream; freeze 8 hours or overnight.

Ingredients
1 cup (6 ounces) semi-sweet chocolate chips
1/4 cup margarine or butter
2 cups biscuit baking mix
1 (14-ounce) can Eagle Brand Sweetened Condensed Milk (NOT evaporated milk)
1 egg
1 teaspoon vanilla extract
1 cup chopped nuts
1 (8-ounce) package cream cheese, softened
1/2 cup confectioner’s sugar
1/2 cup red raspberry preserves
Red food coloring, optional
Chocolate Drizzle

Preparation
Preheat oven to 350°F. In small saucepan, over low heat, melt chips with margarine.
In large mixer bowl, combine melted chips, biscuit mix, sweetened condensed milk, egg and vanilla; mix well. Stir in nuts. Turn into well-greased 15×10-inch baking pan.
Bake 20 minutes or until center is set. Cool thoroughly. In small mixer bowl, beat cream cheese, sugar, preserves and food coloring, if desired, until smooth; spread over brownies. Garnish with Chocolate Drizzle. Chill. Cut into bars. Store covered in refrigerator.

Ingredients
1 cup Sun-Maid
California Apricots, chopped
1/2 cup butter or margarine, softened
2/3 cup firmly packed brown sugar
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1/4 teaspoon baking soda
1 1/2 cups old-fashioned oats
1 cup chopped walnuts
1/2 cup apricot jam

Preparation
Place apricots in small bowl and cover with warm water; soak 10 minutes. Pour off water and pat dry. Combine butter, brown sugar and vanilla; beat until well blended. Add flour and baking soda; mix well. Stir in oats and walnuts. Reserve 1 cup oat mixture for topping.
Press remaining oat mixture into 8-inch square pan. Combine chopped apricots and jam.
Spread apricot mixture to within 1/2 inch of edges. Sprinkle with reserved oat mixture; press lightly. Bake at 375°F 25 to 30 minutes or until golden brown. Cool in pan; cut into bars.

4 cups finely chopped dried apricots (about 1 pound)
4 cups flaked coconut or coconut macaroon crumbs (about 21 macaroons)
2 cups slivered almonds, toasted and finely chopped
1 (14-ounce) can Eagle Brand Sweetened Condensed Milk (NOT evaporated milk)
Whole almonds (optional)

Preparation
In large bowl, combine all ingredients except whole almonds. Chill 2 hours.
Shape chilled dough into 1-inch balls. Top each with whole almond (optional). Store leftovers tightly covered in refrigerator.
