This past weekend Matt and I hit road heading for Youngstown, Ohio. On the second day of driving Louisville was in our path right around lunch time. I read that Louisville is the home of a little establishment known for the best burger in the country. It goes by the name of “The Ollie Burger” and can be picked up in a little makeshift trolley (really just a tiny building with a fancy paint job) located near Louisville University, home of the Cardinals. I came across more than one account of people who claim this is the best burger they have ever had and that the fries were just as memorable. We were driving in the city of Louisville and spotted the trolley one block over and my mouth started to water immediately.

Ingredients
1-1/2 cups Smucker’s® Natural Creamy Peanut Butter
1/2 cup butter or margarine, softened
1 teaspoon vanilla
1/2 teaspoon salt
3 to 4 cups confectioners’ sugar
Coating:
1 pound chocolate flavor candy coating
2 tablespoons Crisco® Shortening

Preparation
Combine Smucker’s Natural Creamy Peanut Butter, butter or margarine, vanilla and salt in large bowl. Beat at low speed of electric mixer until blended. Add 2 cups sugar. Beat until blended.
Continue adding 1/2 cup sugar at a time until mixture shaped into ball will hold onto toothpick. Shape into 3/4 inch balls. Place on tray. Chill.
For coating, combine candy coating and Crisco Shortening in microwave-safe bowl.
Microwave at 50% (medium) for 30 seconds. Stir. Repeat until mixture is smooth. Insert toothpick in candy ball. Dip three-fourths of ball into melted coating. Scrape off excess.
Place on waxed paper lined tray. Remove toothpick. Smooth over holes. Refrigerate until coating is firm; then remove from paper. Store…

Ingredients
2 cups creamy peanut butter (not all-natural)
1/4 cup (1/2 stick) butter or margarine, softened
3 3/4 cups (16-ounce box) powdered sugar
2 cups (12-ounce package) Nestl? Toll House Semi-Sweet Chocolate Morsels
2 tablespoons vegetable shortening

Preparation
LINE baking sheets with wax paper.
BEAT peanut butter and butter in large mixer bowl until creamy. Beat in powdered sugar until mixture holds together and is moistened. Shape into 1-inch balls; place on prepared baking sheets. Freeze 1 hour.
MELT morsels and shortening in medium, microwave-safe bowl on HIGH (100%) power 1 minute; stir. Morsels may retain some of their shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until melted.
DIP peanut butter centers into melted chocolate using toothpick, leaving small portion of center uncovered. Shake off excess chocolate and scrape bottom of candy on side of bowl. Return to baking sheets; refrigerate until chocolate is set. Store in…

Ingredients
1 1/4 cups all-purpose flour
1/3 cup sugar
7 tablespoons butter or margarine, softened and cut into 1/2-inch pieces
1 egg yolk, beaten
1/3 cup flaked coconut, packed
2 (8-ounce) packages plain cream cheese, softened
1 (14-ounce) can Eagle Brand Sweetened Condensed Milk (NOT evaporated milk)
2 eggs
1/2 cup lime juice

Preparation
Preheat oven to 400°F. With mixer fitted with flat paddle, combine flour and sugar; add butter and egg yolk; blend until combined. Mix in coconut. Press dough evenly into bottom of greased 13×9-inch glass baking dish.

Ingredients
1 10-ounce jar maraschino cherries, stemless
3/4 cup finely chopped pecans
Pinch of nutmeg
Pinch of cinnamon
8 ounces semisweet or milk chocolate, cut into pieces
8 ounces white chocolate, cut into pieces

Nutrition
Chop cherries; set aside. Mix pecans with nutmeg and cinnamon; set aside. Before melting chocolate, cover large baking sheet or other flat surface (that fits in refrigerator) with waxed paper. Melt semisweet chocolate in small saucepan over low heat; stir constantly. Do not allow it to burn or get hard in bottom of pan. Pour melted chocolate in prepared pan. Using a metal spatula or knife, quickly spread chocolate into a rectangle, about 14 x 8 inches or about 1/8 inch thick. Put in refrigerator; chill about 20 minutes. Melt white chocolate in small saucepan, being careful that it does not burn in bottom of pan; stir constantly. Remove pan with semisweet chocolate from refrigerator.
