Description
Drop one into a cup of hot coffee or tea, or enjoy this delicious treat on its own.

Ingredients
1 cup butter (no substitutions)
2 cups honey
2 cups whipping cream
1 cup brown sugar
1 teaspoon vanilla extract
Finely chopped almonds and/or coconut (toasted or untoasted), optional

Preparation
Line bottom and sides of 9-inch square pan with plastic wrap; set aside.
Melt butter in medium-sized heavy saucepan over medium-high heat.
Add honey, cream and brown sugar; mix well. Cook over medium-high heat until mixture comes to boil, stirring frequently.
Reduce heat to medium and continue boiling, stirring frequently, until candy thermometer registers 250°F to 255°F, about 45 minutes.
Remove from heat and stir in vanilla; pour into prepared pan.
Let cool completely in refrigerator before cutting into individual caramels with very sharp knife.
Roll in chopped nuts or coconut, if desired, and wrap each individually in clear plastic wrap.

Ingredients
1 package (14 ounces) White Candy Melts, coarsely chopped
1/2 cup heavy whipping cream
2 to 3 drops cherry or raspberry candy flavoring (optional)
Dark Cocoa, Light Cocoa, White or other favorite Candy Melt variety
Red, pink and lavender colored sugar

Preparation
Melt white Candy Melts with cream according to package directions. If desired, stir in flavoring. Pour into shallow pan.
Refrigerate 1 to 2 hours or overnight until firm but pliable. Roll into 1-inch balls.
Melt desired variety of Candy Melts according to package directions.
Dip balls into melted candy and place on parchment or waxed paper-lined cookie sheets; if desired, sprinkle with colored sugar.
Refrigerate until set. If desired, drizzle non-sugared truffles with contrasting melted candy.

Serves
Makes about 5 dozen truffles

Ingredients
Cookie base
1/4 cup butter
1/4 cup shortening
1/2 cup firmly packed brown sugar
1 cup sifted all-purpose flour
Mix
2 large eggs
1/4 cup Copa De Oro Coffee Liqueur
1 cup brown sugar, packed
1/4 cup sifted all-purpose flour
1 teaspoon baking powder
3/4 teaspoon salt
1 1/4 cups flaked coconut
3/4 cup chopped pecans

Preparation
Cookie base – Cream 1/4 cup each butter and shortening and 1/2 cup firmly packed brown sugar.
Stir in 1 cup sifted all-purpose flour, mixing well.
Spread base over bottom of greased and floured (or parchment lined) 13- x 9- x 2-inch pan.
Bake at 350°F 10 to 12 minutes.
Mix – Beat eggs in small bowl. Beat in coffee liqueur and brown sugar until fluffy.
In large bowl, resift flour with baking powder and salt. Stir into creamed mixture. Fold in coconut and pecans.
Pour over partially baked cookie base and return to oven.
Bake 20 minutes or until top is set. Remove from oven and cool on wire rack. Cut into bars.

Serves
Yield: 2 dozen bars, about 1 1/2-…

Ingredients
1 bag (11 ounces) caramel bits
2 tablespoons milk
9 whole graham crackers
1 cup roasted peanuts
1 cup miniature marshmallows
1 cup pretzels, broken into large pieces
1/2 cup chocolate syrup

Preparation
In a microwave safe bowl, microwave caramel bits and milk on high for 2 minutes; stirring every 30 seconds until melted.
Line bottom of 13 x 9-inch baking pan with foil. Place graham crackers in bottom of pan, breaking into smaller pieces when necessary to completely cover pan. Pour caramel mixture over the top of the graham crackers. Layer with peanuts, marshmallows and pretzels. Drizzle chocolate sauce on top. Allow to cool before cutting into bars.
